Veggie Feta Pasta
Roasted Veggie Pasta with Feta is a perfect, easy meal bursting with flavor. This dish is great for dinner on those hot summer nights by the pool. Try it out and tag us in all your pasta photos on Instagram @firstqualityproduce.
Ingredients:
- 6oz block of feta
- 1 cup cherry tomatoes
- 1 red onion, thin wedges
- 1 large zucchini, half moon cut
- 1 bell pepper diced
- 2 tbs. olive oil
- 2 cups arugula
- 2 tbs. fresh lemon juice
- Salt
Prep:
Preheat oven to 400 degrees.
Place all cut ingredients on a sheet pan with feta block in the center.
Drizzle feta with olive oil.
Bake for 15 minutes.
Pasta:
Prepare your favorite pasta and set aside in a large bowl.
Once vegetables and feta are done. Stir the feta in the pasta, then gently combine the vegetables and arugula into the dish.
Serve:
Finish it off with some fresh lemon juice!
